Like most home cooks with a family to feed, I’m always on the lookout for easy, healthy, and tasty recipes to try. We are big fans of 1) roasted veggies and 2) soup in my family, so here are three giant pans of veggies (and protein) and one pot of soup that have been hits in my household lately:
Sheet-Pan Ratatouille With Goat Cheese and Olives

I’ve had pretty good luck with Melissa Clark’s recipes over the years, and this was no exception. It was delicious, and even the more carnivorous members of the family enjoyed it. I did leave out the olives – I don’t hate olives, but I was much more interested in the veggies and goat cheese.

Sheet Pan Chicken Tikka
As I said, my family loves a roasted veggie, and roasted cauliflower might be our favorite of all. One of my go-to easy dinners is to season a big pan of cauliflower and onions with cumin seeds, roast them up, and toss them with pasta and Parmesan cheese. It’s good to switch it up sometimes, too, however, and we really enjoyed this Indian-inspired alternative.

Sheet-Pan Roast Chicken and Mustard-Glazed Cabbage
I feel like I haven’t quite nailed this recipe yet, but it was so tasty that I intend to keep trying. The first time I made it, the chicken wasn’t quite done at the same time as the cabbage, and the second time, I covered too much of the cabbage with chicken since I had a couple extra pieces, and the cabbage was underdone. My failure to nail the timing notwithstanding, the flavors of this dish were delicious, so I’m going to keep trying.

Dairy-Free Leek and Potato Soup
My husband and niece are both lactose-intolerant, with milk and cream being the hardest for them to digest and cheese and yogurt being more tolerable. I, on the other hand, love dairy in most forms, so I’m always on the lookout for recipes I can cook for them that are as delicious as the dairy-filled versions I love and grew up with. Potato leek soup is a longtime favorite comfort food of mine, so I was very happy to find a recipe that was creamy and richly flavored without containing cream. It was a big hit with everyone.
